Otto's x Ruvi Gluten Free Blueberry Sheet Pancakes

Picture an effortless breakfast of light, fluffy pancakes spread across a sheet pan and baked to golden perfection without needing your constant attention. Otto's and Ruvi is a match made in heaven! All of the yumminess, none of the hassle.

INGREDIENTS
  • 2 ¼ cups Otto’s Naturals Cassava Flour 
  • 2 packets Ruvi Focus
  • 2 Tablespoons baking powder
  • 1 teaspoon sea salt
  • 2 ¼ cups milk
  • 4 eggs
  • ¼ cup avocado oil
  • ¼ cup maple syrup
  • ½ -1 cup blueberries (fresh or frozen) 
INSTRUCTIONS
  1. Preheat the oven to 400°F.
  2. Whisk together the cassava flour, Ruvi Focus, baking powder, and salt in a large mixing bowl.
  3. Add the eggs, avocado oil, maple syrup, and milk. Whisk until the batter is smooth.
  4. Grease a 9x13 pan. Pour the batter into the 9x13 and spread it out evenly. Sprinkle the blueberries over half or the whole pan, whichever desired!
  5. Bake for 25-28 minutes. The pancake should be golden brown and bounce back when pressed gently.
  6. Enjoy warm with maple syrup and your favorite pancake toppings!
We love Ruvi on it's own, but mixing it with some of our favorite products only enhances the yumminess!
